Olive oil is the liquid fat produced when the small fruit of a Mediterranean tree is squeezed. You can drizzle olive oil on your salad, dip your bread in it, or use it to stir-fry vegetables.
Oil extracted from olives has been used since ancient times, for cooking, moisturizing the skin, burning in lamps, and in religious practices. Today it's considered a healthy dietary fat, as well as a delicious ingredient in many foods. Olive oil is yellow or greenish in color, with a variety of flavors, from fruity to peppery to bitter, that result from different olive varieties. Its original name in English was oil of olives.
